Just What We Don’t Need

Back in February, I said this:

Recently, people have been having a lot of success losing weight on a gluten free diet. It worked because people on these diets knew they couldn’t eat cookies, candies and cakes. They know that they have to look carefully in ingredient lists for things that might contain gluten, and for some of them this is a matter of life and death. Now I see “gluten free bakeries” and all kinds of chemistry lab crap labeled “gluten free” and I see the end of gluten free dieting on the horizon.

Now, Domino’s Pizza wants a slice of the action: Gluten Free Pizza.

Well, sort of.

First and foremost, even the CEO points out that they will be baked right alongside the gluten-containing pizzas. For pity sakes, there’s gluten all over a pizza shop. There is no guaranty that these pizzas will in fact be gluten free by the time they reach your home. I find it unlikely they will be. So right off the bat, we know that this product is not aimed at people with a genuine gluten sensitivity or Celiac Disease. If you really must avoid gluten, you really must still avoid these pizzas.

Second — and of great importance to the kind of people who think they are eating healthier by avoiding gluten — I can’t find a word about what this gluten free crust is made of. Not wheat, obviously. What kind of flour is involved: soy, almond, tapioca? Sawdust? The fact that they won’t come out and say “made from wholesome [insert foodstuff here] flour” makes me suspect that this is just another chemistry lab experiment, for which they will charge an additional $3.

Cheesy.

The Decline of the Butcher Counter

When I was a kid, any decent grocery store had a butcher counter. The butcher was there every day. He could help you pick a cut of meat for your recipe, or grind some beef for you, or get “specialty cuts” for you. If you only needed a small roast and all that was out were big ones, he could cut a big one down for you. And of course, he always had lollypops for little kids. Of course, some things were out of his realm — bison, lamb, venison, kosher or halal meats for example — and for that you’d have to go to a specialty butcher shop.

A lot of grocers still have something they call a butcher counter, but it’s not what it used to be. Most of the meat that gets sold comes to them already packaged and ready for sale. A small amount of meat is in the counter, mostly common items like ground beef and chicken breasts, and sale items. The “butcher” is also responsible for the meager selection of seafood, often half of it pre-cooked shrimp in various sizes, along with seasonal items like salmon in Springtime. The “butcher” himself knows cuts of meat, but he’s unlikely to know much about meatpacking. I really only know one traditional grocer in town that has a real butcher, and that’s a kosher butcher in a heavily Jewish neighborhood. Ask him about chopped liver and you’ll get a regular dissertation.

Some stores don’t even have that much. Just try to find a butcher in a Wal-Mart Supercenter or a Fresh And Easy. Every bit of meat arrives shrink wrapped, much of it half-frozen. What’s in the cold case is what they’ve got. The end.

So this brings me to an interesting discovery. Some ethnic markets still have actual butchers! That’s right, a human being who hacks up cows and chickens and pigs and sells the parts. I don’t worry about “pink slime” in the ground beef from my local Asian grocery store, because I have every reason to believe there’s a guy dumping chuck steak into a grinder in the back. Because most of the clientele isn’t interested in traditionally Western cuts, things like sirloin and filet mignon are downright cheap. This particular store even has a fish counter where you can buy frozen or fresh seafood (some of it still swimming). And as if that’s not enough, the produce is fresh, plentiful, and inexpensive. We also have a terrific Hispanic superstore that has a whole section devoted to different kinds of bananas. Shopping at these alternative stores is also a great way to stay away from heavily processed “Standard American Diet” foods.

So do yourself a favor: head out to your local ethnic market and see what they’ve got. You might have a new favorite grocery store!

Yin and Yang of Healthy Living, Part 2

You will never get in shape through diet, and you will never control your weight through exercise.

Yesterday, we talked about diet. Today we talk about exercise. Together they work like two halves of a fitness and health puzzle that fit together perfectly.

To clarify my initial statement, exercise makes a great part of a weight loss strategy. However, if all you do is add a few workouts to a crappy diet, you won’t get good results. It would be more accurate and less pithy to say that you will never control your weight through exercise alone.

Visualize with me, if you will, a table with 3 legs. It will look a lot like this one from Amazon:

Now, imagine that we label these legs strength, cardio, and flexibility. Each of these is an important part of fitness. Strength, briefly, is your ability to lift and move things. That includes moving your own body. Cardio is shorthand for cardiovascular or cardio-resperatory fitness, your ability to provide oxygenated blood to your muscles while you move. Flexibility is the ability to move your joints through a complete range of motion — for example, moving your arm around in a big circle or lifting your leg up in front of you and putting it back down again.

At this point, some people violently disagree with me. “What about endurance? Agility? Speed? Coordination? Balance? Accuracy? Sports performance? You idiot!” Here’s my answer: all those are abilities you put on top of the table, like you’d put books or a vase on a real-life table. They’ll slide off if you don’t already have 3 legs to support it!

Let’s say you have to go to the grocery store to buy a 20 pound bag of something: cat food, rice, water softener salt, bag of ice, whatever, it doesn’t matter. You will still need to be able to walk through the store, because these things are invariably near the back. You’ll have to kneel down to pick it up, because it’s on the bottom shelf (wouldn’t want it falling on someone). You’ll have to lift it and carry it to the cashier, then out to your car. To do those things, you need cardiovascular fitness, strength, and flexibility. If you don’t have that, it doesn’t matter how fast you can do it, how long you can carry the bag, how precisely you can lay it down on the cashier’s conveyor belt, or anything else.

So, not surprisingly, an exercise regimen for a beginner must focus on becoming more strong, getting a healthier heart through cardio training, and becoming more flexible through activities like stretching or yoga. An exercise regimen for someone more advanced can certainly include training for such qualities as endurance, speed, and agility.

A little explanation here. My office is beginning a “Biggest Loser” style challenge this week, and this post is in support. Yes, I know everybody sensible did their posts on this topic at the beginning of the year. Perhaps this will help those at risk of falling off the New Years Resolution bandwagon. It’s never too late to start new, good habits. Those of you who have sworn off diets permanently should feel free to scroll down to the closing bits.

Part One: Diet

I know I’ve said this a number of times, but every weight loss diet that works demands that you sharply limit — if not completely eliminate — added sugars from your diet.

In the 70s and 80s, people could lose weight on a low-fat diet. It worked because people on these diets knew they couldn’t eat cookies, candies and cakes. They knew they couldn’t eat most sauces. They knew they had to eat plenty of vegetables. Dean Ornish never, ever said you could lose weight by switching from Snickers to Twizzlers. Then the Food Industry started making food-like chemistry sets with words like “low fat” and “fat free” in the name. Suddenly these people could eat cookies, candies, and cakes and pretend they were still following a diet. These people did not lose weight, and many of them decided that fat free diets don’t work.

In the 90s, people could lose weight on a low-carbohydrate diet. It worked because people on these diets knew they couldn’t eat cookies, candies and cakes. They knew they had to avoid added sugar in everything from turkey lunch-meat to yogurt to spaghetti sauce (which they could put on a nice chicken filet but not spaghetti). They knew that pasta was nothing more than pressed flour (yum?). People who actually read up on the subject before charging off to the meat counter knew they had to eat plenty of veggies.  Then the Food Industry started making food-like chemical sets with words like “low carb” and “sugar free” in the name. Suddenly these people could eat cookies, candies, and cakes and pretend they were still following a diet. These people did not lose weight, and many of them decided that low carb diets don’t work.*

I’ve known people who lost weight on a vegan diet. It worked because people on these diets knew they couldn’t eat cookies, candies and cakes. They knew they had to eat lots of vegetables and actually think about where their protein is coming from. I’ve known other vegans who depend too much on food-like chemistry sets to simulate eating food that they shouldn’t be eating such as cheeseburgers. They don’t lose weight.

See a pattern here?

Nobody will ever lose weight eating cookies, candies, cake, ice cream, or sweetened fizzy drinks. On the other hand, most people will have a hard time losing weight on the food-like chemistry sets that the Food Industry tries to sell people who are on a diet. The purpose of “diet food” is to get you to buy more of it, and you won’t do that anymore if you lose weight and get on a sensible weight maintenance program. Which brings me to another interesting point: if after losing weight, you go back to eating the crap that made you fat in the first place, you will gain back every pound you lost.

Success lies in a sensible path: no added sugars; plenty of water; plenty of veggies; sensible use of quality fats; fewer food-like chemistry sets and more real food; pay attention to what you are eating and don’t eat more calories than you use; only eat stuff worth eating, and then only if you are hungry. I don’t think there’s a nutrition expert in the world that will disagree with these points, unless they are paid to do so.

* The new twist on this is Paleo or Primal eating, which goes back to the idea that processed food (including corn syrup) is bad, grains and legumes are suspicious, and if a caveman wouldn’t have known it was food you should probably not eat it. Some mistakenly see this as “all the protein I can stuff in my pie-hole, and then put some bacon on it.” They probably aren’t really eating as many veggies as would be desirable.

In Closing: If hard work cured poverty, the third world wouldn’t exist; you mean your local university doesn’t have a SWAT team?; cyberwar; diamonds; shocking; and magic button.

Sign of the Times

Because nothing says “prosperity” like pallet upon pallet of ramen. Smells like college.

So here’s a couple of ramen recipes for you:

Tuna Ramen Casserole

Bring a pot of water to a boil. Add frozen mixed veggies, then when the water boils again, add the ramen. When the ramen is done, pour off the water. Combine with canned tuna, diced onion, and the spices of your choice.

Asian Ham with Noodles

Start your water boiling. Put oil in a hot wok, then start to saute some onions and bell peppers. Add garlic, soy sauce, sriracha or red pepper flakes (if you like it spicy), and a half pound of frozen stir fry veggies. Add 1 pound cubed ham. When it’s hot, drain and set aside. By now your water should be ready! Cook 2 packages of ramen until it’s almost but not quite done, then drain. Bring the wok back up to medium heat with a little oil and soy sauce, put the ramen in and give it a good stir. Put the meat and veggies in there, mix completely, and serve.

So what do I do about my hair? The sad truth is “not much”:

  • I make sure I don’t go too long between hair appointments. A lot of bad hair days are caused by split ends and growing out of a good trim. I know it’s tempting for a lady to grow hair out over the winter, but that’s only a good idea if you love ponytails… Every. Single. Day.
  • I already live in Vegas, where it’s “drier” most of the time. There is no substitute year round for a quality everyday conditioner, and perhaps a weekly deep condition. My hairdresser insists I need a leave-in, and I admit that helps on days where my hair is fighting all efforts to be combed.
  • Again, this is one I can only get away with because I live in Vegas. Never ever do this if you live someplace it freezes in winter. I am lousy with a hair dryer, so I just don’t use one! I just “gel, scrunch, and go.” As a result, I don’t have to deal with heat damage.

So no, I don’t do a lot special on my hair in winter. My skin is another story! I get very dry skin, and I have a strategy to deal with it. Of course, it involves a moisturizing sunscreen on my face. It also involves a good quality moisturizer on my hands and legs. But there’s more: my daily supplements include fish oil and Vitamin D (which I’m not getting through sun exposure); and quality anti-aging products selected with the help of a physician.

(I particularly like the line about “Shockingly” this is common!); using “facts and logic” — I  know the bumper sticker says that should confuse a liberal like myself — to prove CRA didn’t cause the housing bubble; How to talk to people at Thanksgiving who are likely to have read “How to talk to a Liberal, if you must” and other family members; the new poor; maybe they liked the scenery; the banks finally stole too much; police bust down the door and kill the dogs… over a stolen Xbox that wasn’t even there (ya know, I bet Microsoft would have gladly told cops what IP address it was on!); as usual, Dave Johnson is long-winded but correct (I’d add “water and sewer” to his list); Grayson is hilarious (and knows the Bible); and Shatner on Turkey.

International No Diet Day

International No Diet Day is May 6. I know some of my readers practice “No Diet Day” every day, and I mean them no offense by this post. I recognize that there is a small minority of people — mostly people with a decades long history of dieting and failing and/or people recovering from eating disorders — for whom dieting is a detrimental if not downright pathological activity.

I first learned of the existence of this day from this defacement of their Wikipedia entry. As a result, I took a look at their website. It makes my brain hurt. From it’s whimsical use of Comic Sans in a serious document to it’s chronic misuse of scientific information, I just can’t imagine taking International No Diet Day seriously.

One of the goals of the occasion is to “Recognize how dieting perpetuates violence against women”. Excuse me? There are people who assault women over the issue of dieting? Failing to “recognize” that, here! I’m sorry for the narrow-minded viewpoint that “violence” implies “physically hurting someone,” but Merriam-Webster’s got my back on this one. Am I seriously missing news stories about women being beaten up for eating a donut? For not eating a donut?? To add insult to imagined injury, I can’t find any information on their site that would support or clarify this goal. If they want to argue that there are people who make fun of dieters and people who make fun of fat people, I can agree with that. Calling it “violence” undermines their movement.

Let’s move on to their “facts” and figures about dieting. Between “90 and 99%” of diets don’t work forever? Pretty big range there! Sure would have been nice to link to a study or two, preferably ones that use those numbers. There’s reasons for diet failure, of course, and most of them can be controlled. Then “virtually all” dieters gain it back? That’s a big shock to me, my family, my friends, and many people on the internet.

Yes, it’s true that the “diet industry” and diet scams earn a lot of money from people who desperately want to get thin, but can’t get the hang of eating healthy foods in reasonable quantities and engaging in physical activity. Want to have a “Boycott Diet Industry Vultures Day”? A “Say No To Crappy Diet Food Day,” or “No Diet Shakes for Me Day”? Perhaps just simply a “Don’t Waste Money On Stuff That Doesn’t Work Day”? I’m there.

In the end, the “facts” and figures section has a lot of statistics and mentions studies, but provides no data or links or actual scientific papers to back them up. 5% of college aged women are anorexic or bulimic? Seriously? Based on what information? Almost a third of women in their 20s and early 30s have bone mass problems? Really? Tell me, did the makers of Boniva do that study? Where did the data on 9 and 10 year olds dieting come from, a child modeling agency? How hard is it to find citations online? There’s these miracle things called “search engines” now. An English teacher would have a “Field Day” with “International No Diet Day.”

There is one more “goal” that needs mentioning, one apparently too controversial for the frontpage of their site or the Wikipedia entry: “To educate the public about the dangers of weight-loss surgery, diet drugs, and size-biased medical treatment.” By “size-biased medical treatment,” they mean the idea that your doctor thinks you will be healthier in the long run if you lose some weight and keep it off. Here’s the facts: study after study shows that obese people are at higher risk for a variety of cancers (oh look, I used a search engine to find a gaggle of studies!); obesity is a major risk factor for heart disease; obesity is a risk factor for osteoarthritis in the joints of the lower body; obesity is a risk factor for diabetes (at least one doctor I know insists that if you are overweight, you will eventually become diabetic. Sobering stuff). If it is “size-biased medical treatment” to point these things out, I hope all doctors are so biased.

In Closing: TV ownership in America on the decline, both due to poverty and internet delivery of video; FDA getting ability to do something about food safety; flashmob robbery; waaah; small business hiring disappointing; we’ve all gone crazy; Orwell would be proud indeed; propaganda; “Dude, I need, like, about 250 sliders, man”; thank you, anti-vax morons; and an interesting view of 2012.

Recipe Day!

Disclaimer: I haven’t actually tried to cook any of these items. But they sound and look tasty.

Let’s start off with some traditional Mexican food. Then let’s add some Tacos De Carnitas. Yum.

Jack LaLanne

The man who revolutionized exercise in America, Jack LaLanne, died yesterday at the age of 96. He performed several spectacular public stunts, set world records, had a popular exercise show for decades, preached weight-bearing exercise and healthy eating, owned health clubs, and invented a bit of equipment you’ll find in every serious gym, the Smith Machine (click there to find out why it’s called the “Smith”machine instead of the LaLanne Machine). Oh, and although I can’t find signs that he practiced, he was a Chiropractor (it was probably the most efficient way to learn anatomy and physiology for him).

Rest in peace. I do hope some of today’s fitness superstars have enough class to attend his funeral.
